With the rainy season well upon us and the Autumn literally at the doorstep, why not cozy up with a warm bowl of feel good food?

Oxtail in Tomato & Herb Sauce Rebel Cook

  • Meat: 3kg oxtail (thinly cut)
  • Seasoning: 2tspn each salt & pepper/3tspn beef stock granules
  • Oil: 3 tbspn cooking oil
  • Vegetables: 2 cups onion/3 teaspoon crushed garlic/2 chopped red peppers/1tbspn chopped fresh chilli
  • Herbs: 2 sprigs fresh rosemary/2 sprigs fresh parsley/ 2 tbspns dried onion flakes
  • Liquids: 3 cups red wine/1 litre beef stock/3 cans tomato & onion mix
  • Paste: 3 tbspn tomato paste

Instructions

Season meat, fry until browned. Add 1 litre of boiled water and cover, simmer for an hour on medium heat. After an hour, the liquid should have reduced, you can further fry your meat for 10 minutes. Add your vegetables and continue to fry for a few more minutes, throw in your tomatoes, paste and herbs, combine thoroughly, after 3 mins add your liquid stock. Cover your pot and simmer on low, for 2 hours, stirring continuously. Adjust seasoning, to suit your taste.
